I got back from California about a week ago, and it was incredible. I went to a two week conference with my sister and three of our friends, and we all came back so encouraged. Part of the emphasis at the conference was on dance, so it was so incredible being able to do that so intensely again. I’m excited to see what new dance opportunities come my way this semester!

The days were packed full of the conference, and then we would go home and make dinner together. On the weekend we got to explore and go on some adventures, like visiting this amazing waterfall! It was super fun being able to live with my friends for two weeks!

As the summer comes to a close, I also just wanted touch on what my plans are for blogging this semester. I still love doing it, but I know I’m just not going to be able to as often this year. I won’t be stopping completely, and I still hope to post several times a month, but I already know I’m going to need more time this semester, and blogging three times a week is a lot of work!

Just wanted this to be a quick update post! Happy August.

Five Favorites: New Nikes + VS Fragrance

This past month I had a good amount of down time and a list of things I had been wanting… so I got some things :) Luckily, I had actually been wanting all three of them for a while so I feel pretty justified haha.

Here are five of my favorite things right now:

1. Victoria’s Secret Vanilla Lace Fragrance Mist.

This has actually been my favorite scent for a few years now, but I ran out a few months ago and recently found it on their website for 2 for $10!! That’s a major deal. So much of a deal that it actually makes me worried that they’re going to discontinue it soon! I really hope they don’t because this vanilla scent is the perfect balance of sweet and musk. It doesn’t smell like the extremely sweet vanilla scent you would imagine, and I get compliments on it all the time. It’s exactly how you would want a vanilla perfume to smell.

2. Blogilates.

So, I’ve talked about how I run and do other home workouts a lot, and you can read about some of my favorites here. And I knew about Blogilates, but I never really got into it until recently I figured out that she has a monthly calendar. This was a game changer for me because combining all of those workouts is super hard and challenging! I love alternating it with running and some other workouts throughout the week now! If you don’t know what I’m talking about, Blogilates is a workout Youtube channel. The workout videos are put up a few times a week, and then each month on her blog, she puts up a calendar of which videos to do each day. It’s super fun!

3. New Nikes.

I had been wanting some new sneakers for a really long time. Then, when I was in New York City I saw a lot of people wearing really cute Nikes, and I decided that would be my next pair of sneakers. My feet just also hurt a ton and it probably was my weakest point to be looking for sneakers! I literally bought these two days after I got home. I just think they’re really great for traveling because they’re black and match with normal outfits, but they’re also comfortable for working out in!

4. Faux Leather Keds.

When I returned from NYC, I also decided that I needed a new pair of Keds. (I know, New York did things to me). Anyways, while I was there I had worn my old faux leather knock off keds from Forever21. (hence the dying feet). They were already practically falling apart when I left, and by the time I got back I could actually justify throwing them out and getting a new pair. It’s not everyday that I literally wear out a pair of shoes. But I wore those babies everywhere and I’m confident I’ll do the same with these!

5. Chia Seed Pudding.

I have a new chia seed pudding addiction. It all started with my Mango Coconut Chia Seed Pudding recipe that I put up on this blog! You can read it here. After I made that recipe I started trying out all other different combinations, and so far I’m loving it so much.

I feel pretty satisfied with my new discoveries and my new purchases this month! What are your favorites right now?

Homemade Granola Bars

Recently I’ve been seeing a lot of homemade granola bar recipes on Pinterest and I decided it would be a fun thing try making. I wanted to make them before I went to California (which is where I am while you’re reading this) so I could bring them with as a snack on the flight and for the first few days.

These were super fun to make because aside from some basic recipes I looked at, I kind of just made it up as I went along.

And they’re soooo much better than regular granola bars. They didn’t take long to make either.

Here’s what I used:

(summarized recipe at end of post)

1 Cup of Dates

1.5 Cups of Oats (that I toasted in a pan)

1/4 Cup of Honey (I used a little bit less than that actually)

1/8 Cup of Peanut Butter

1/8 Cup of PB2 (you could use regular peanut butter instead if you don’t have this)

1 Cup of Nuts/Seeds (I used about 1/2 almonds, 1/4 sunflower seeds, 1/4 walnuts)

Here’s how I made them:

I used chopped dates, so they were a little bit dry. So, to start I soaked them in water for a few hours. Then, I put them in a food processor until blended.

Next, I toasted the oats on a pan just to make them crispy and give them a toasty flavor.IMG_4745

I then put the nuts and seeds in the food processor quickly just to roughly chop them up, and then added them in a bowl with the dates.

Lastly, I melted the peanut butter and honey in the microwave, stirred together, and mixed into the nut and date mixture.IMG_4748

The last step was just to line a baking dish with plastic wrap, press the mixture down firmly, and refrigerate for about an hour until firm!IMG_4750

Once, out of the fridge I just chopped them into 8 bars. These were so good. They really taste homemade, and you can taste all of the different flavors inside. This is definitely a hearty snack that you should try to make. I know I’ll be trying it again with different nuts and seeds!

Homemade Granola Bars

Ingredients

  • 1 1/2 cup oats (toasted)
  • 1 cup dates
  • 1 cup any ratio of nuts and seeds (I used 1/2 almonds, 1/4 sunflower seeds, 1/4 walnuts)
  • 1/4 cup honey
  • 1/4 cup peanut butter (I used half PB2)

Instructions

  1. To prep: Soak dry dates in water for a few hours if they need plumping. Toast oats in a pan, and line a baking dish with plastic wrap.
  2. Blend dates in a food processor.
  3. Chop nuts and seeds roughly in food processor.
  4. Mix dates with nuts and seeds.
  5. Melt peanut butter and honey in the microwave and stir.
  6. Add the honey and peanut butter to the nut and date mixture.
  7. Press the mixture into the lined baking dish.
  8. Refrigerate for about an hour.
  9. Chop into bars.
